If the technology incorrectly estimates a user to be under 18, they can verify with a credit card or a government ID. YouTube said it will only allow users who have been verified over 18 to view age-restricted content that may be inappropriate for younger users.

YouTube began rolling out an 'age-estimation model' in the U.S. that uses AI to restrict access to users determined to be under 18 years old.

Google's ambitious AI age verification isn't contained to YouTube. It appears to be making its way to Google Search as well.
