Crab Apple Jelly Wash apples and roughly chop into a large pot. Cover up approx half way with water and stew to soften. Extract juice through a muslin cloth or similar( takes a few hours) measure juice. Add 1lb of sugar for every point of juice. Stir over heat to dissolve and bring to the boil, skim any scum from the surface and continue to boil rapidly till you reach setting point( test on a cold plate) pour into sterilised jars and seal.
