Here's how I cook ribs on the backyard offset, start to finish. I am using the Oklahoma Joe's Longhorn Reverse Flow offset smoker fitted with the Tuning plate and charcoal basket from @lavalockproducts . To start my fire, I am using about ½ chimney of @bbcharcoal oak lump charcoal and a couple wood splits. For ribs, my ideal cooking range is between 250-275 °F.
